High Protein Zucchini Fritters - The Collagen Co.

Crispy on the outside, soft on the inside—these fritters are the perfect blend of light, fresh, and satisfying! Packed with cottage cheese, eggs, and a hint of lemon zest, they’re loaded with protein and flavour. Serve with a dollop of Greek yogurt and a squeeze of lemon for the ultimate nourishing meal.

Ingredients (2 servings)

  • 1 large zucchini
  • 3 eggs
  • 100g cottage cheese
  • 2 tbsp gluten-free flour
  • ½ tsp baking soda
  • 1 garlic clove
  • ½ onion
  • Fresh parsley
  • 1tsp Lemon zest
  • ¼ tsp salt
  • Olive oil, for cooking
  • Lemon juice and greek yoghurt, to serve

Method

  1. Prepare the zucchini: Grate the zucchini using a box grater or food processor. Place the grated zucchini into a clean kitchen towel or cheesecloth and squeeze out any excess moisture. Set aside.
  2. Finely chop the garlic clove, onion, and fresh parsley. Set aside.
  3. In a large bowl, combine all ingredients and mix well.
  4. Cook the fritters: Heat a non-stick skillet or frying pan over medium heat and add a small drizzle of olive oil. Spoon a couple of tablespoons of the fritter mixture into the pan, flattening each one slightly with the back of the spoon. Cook the fritters for 3-4 minutes per side, or until golden and cooked through.
  5. Serve: Transfer the cooked fritters to a plate. Serve with yoghurt and a squeeze of lemon juice.
