Ingredients (Serves 4)

  • 1 medium red chilli
  • 4 garlic cloves
  • 1 (2-inch) piece fresh ginger
  • 1 medium yellow onion
  • 6 tbsp oil (e.g., avocado or canola)
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • ½ tsp ground turmeric
  • 2 ¼ tins canned diced tomatoes
  • ¾ tsp salt
  • 2 400ml cans chickpeas, rinsed
  • 2 tsp garam masala
  • ¼ cup fresh coriander, for garnish
  • 1 serve of The Collagen Co. Super Beauty Greens

Method

  1. Blend Aromatics: In a food processor, pulse the chilli, garlic, and ginger until minced. Add the onion and pulse again until finely chopped.
  2. Sauté Base: Heat oil in a large pan over medium-high heat. Cook the onion mixture, stirring occasionally, until softened (about 3-5 minutes). Add coriander, cumin, and turmeric, stirring for another 2 minutes.
  3. Simmer Curry: Pulse the tomatoes in the food processor until finely chopped, then add them to the pan with salt. Lower the heat and let it simmer for 4 minutes, stirring occasionally.
  4. Add Chickpeas: Stir in chickpeas and garam masala. Cover and let simmer on low for another 5 minutes, stirring occasionally.
  5. Serve: Garnish with fresh cilantro and enjoy!
