Fresh, light, and packed with protein—these Chicken Mango Salsa Lettuce Wraps are the perfect balance of sweet, savory, and zesty! Ingredients (serves 3)

  • 450g chicken breast or tenderloins
  • Salt and pepper, to taste
  • Olive oil spray, for cooking 
    Mango Salsa
  • 1 mango, diced
  • 1 Lebanese cucumber, diced
  • 1 red capsicum, diced
  • 1 avocado, diced
  • ½ small red onion, diced
  • Juice of ½ lime
  • Salt and pepper, to taste
    To Serve
  • Cos or butter lettuce leaves
  • 6 scoops Purple Grape Premium Collagen Peptides + 3 glasses water

Method

  1. Season the chicken with salt and pepper.
  2. Heat a skillet over medium heat, spray with olive oil, and cook for 4-5 minutes per side (or until fully cooked). Set aside, let rest, then dice into cubes.
  3. In a large bowl, combine all mango salsa ingredients and stir to mix well.
  4. Arrange lettuce leaves on a plate. Add 2-3 tablespoons of mango salsa to each, then top with diced chicken.
  5. Add 2 scoops of collagen to each glass of water and stir to dissolve.
