Carrot Cake Loaf

Moist, fluffy and packed with protein — this Carrot Cake Loaf is a wholesome twist on a classic favourite! Made with The Collagen Co. Vanilla Glow Shakes, it’s loaded with warming spices, crunchy walnuts, and topped with a creamy vanilla protein frosting for the ultimate feel-good treat.
Ingredients (serves 8)
- 1 ½ cups (150g) grated carrot
- 1 mashed banana
- 2 eggs
- 1 cup (100g) almond flour
- 1 cup (100g) Vanilla Milkshake Glow Shake
- 1 teaspoon ground cinnamon
- ½ teaspoon mixed spice
- 2 teaspoons baking powder
- ½ cup chopped walnuts and raisins
For the frosting
- 125g light spreadable cream cheese
- 1 tablespoon Vanilla Milkshake Glow Shake
- 1 tablespoon water
Method
- Preheat the oven to 160°C and line a loaf tin with baking paper.
- In a large mixing bowl, combine all of the loaf ingredients and mix until well combined.
- Pour the batter into the prepared loaf tin and bake for 1 hour, or until a toothpick inserted into the centre comes out clean.
- Allow the loaf to cool completely.
- In a small bowl, mix together the frosting ingredients until smooth and well combined.
- Spread the frosting evenly over the cooled loaf, using the back of a spoon to create little swirls or flecks.
- Slice and enjoy!
