Air Fryer Fish Tacos

Crispy, flavorful, and oh-so-delicious, these Air Fryer Fish Tacos are a must-try! Made with perfectly seasoned white fish coated in panko breadcrumbs and paired with crunchy red cabbage, juicy tomato, and zesty Perinaise, they’re a fresh and satisfying meal. Ingredients

350g white fish

1 cup panko breadcrumbs

1/2 tsp paprika

1/2 tsp ground coriander

1/2 tsp garlic powder

1 tsp salt

1/4 tsp pepper

12 tortillas (Coles brand)

Perinaise Peri-Peri Mayonnaise

3 cups shredded red cabbage
-
1 large tomato, diced
-
1 cup corn kernels
-
1/4 red onion, diced

Method

Cut the fish into bite-sized pieces (about 24 pieces).

In a medium shallow bowl, combine the panko breadcrumbs with the paprika, coriander, garlic powder, salt, and pepper. Mix well.

Dip each piece of fish into the breadcrumb mixture, ensuring it’s well coated. Place the coated pieces into the air fryer basket in a single layer.

Lightly spray the fish with olive oil spray, then air fry at 170°C for 15 minutes or until golden and cooked through.

For each taco, add 2 pieces of fish, a drizzle of Perinaise, 1/4 cup of cabbage, 1 tablespoon of tomato, 1 tablespoon of corn, and 1 teaspoon of onion.

Mix 2 scoops of beauty greens with 1 glass of water per person and serve alongside the tacos.
